Revithokeftedes
Chick peas croquettes
Deep-fried croquettes made from chick peas (alternatively from yellow split peas), worldly known as its Middle Eastern name Falafel. In Greek, revithia means chick peas, and keftes (pl. keftedes) is the food of small ball shape.
Ingredients (for about 15 pieces)
| Dry Chick Peas | 200cc |
| Onion | 1 |
| Garlic | 1 clove |
| Tahini | 1 tbs |
| Coriander powder | 1 tsp |
| Cumin powder | 1 tsp |
| Fresh Coriander | chopped, 2 tbs |
| Baking powder | 1 tsp |
| Salt | 1 tsp |
| Vegetable oil | For deep frying |
Method
- Soak dry chick peas in cold water overnight (the cooked tin chick peas do NOT work)
- Put the soaked peas in food-processor and make corse paste
- Add chopped onion and chopped garlic, together with all the other ingredients but oil. Mix until the paste becomes uniform
- Put a frying deep pan with oil on a hob.
- When the oil is hot, shape the paste into a small ball shape and dip it into the oil.
- When the ball (keftes) takes colour, it is done; put it out of oil. Continue with all the pea paste.

Tips
- Can be eaten with salt, pepper and lemon, alternatively with tzatziki or ketchap.
- I have read that tahini can be substituted with non-sugar peanut butter, but I have never tried.
- If you don't like fresh coriander, you can use flat leaf parsely or chopped spring onion.
