Gemistá
(Stuffed Vegetables Cooked in Oven)

Gemistá is typical summer dish in Greece. Vegetables used often are tomatoes, peppers, aubergines, and zucchini, but other vegetables, like onions, can be used as well.
Filling is usually rice with lots of herbs, and sometimes, according to the taste, minced meat is added. It is also standard to add some potato wedges together with the stuffed vegetables, as you see in the photo.
Greeks never serve them hot, but always at warm temperature.
When you eat them in tavernes, they are often very oily, but they are cooked much less oil at home and meke a light summer dish.
