Melitzanosalata
(Smokey Aubergine Dip)

Melizanosalata, i.e. aubergine salad, is a dip made from grilled aubergine, olive oil, vinegar/ lemon, garlic and salt. The same dish exists all over the Middle East and Turkey under different name and with some additional ingredients some times.

The aubergine should be grilled with its skin on. The best result is obtained grilling it on charcoal, but can be made also by gas grilling or grilling in oven. When the skin starts to charred and inside is totally soft, it is ready. Remove the skin and mash the aubergine with the rest of the ingredients.

Should be served with bread or pita.
